The San Diego-based cookie company focuses on reducing food waste by upcycling excess ingredients and sourcing sustainable, eco-friendly items to create a line of vegan, gluten-free, gourmet and protein cookie options. The founders at SOULMUCH, all with backgrounds as servers in the restaurant industry, saw how much food waste there was at the end of the night and decided to do something about it by rescuing the fresh, unused ingredients. Restaurants generally oversupply ingredients to prevent shortage, including brown rice and quinoa, which can be dehydrated and milled into flour for cookies. The brand expanded to upcycling juice pulp from juicers, imperfect produce, almond pulp from an almond milk company and coffee grounds from local coffee shops. In just three years, SOULMUCH rescued more than 20,000 pounds of food.
